You can export every table (sales, purchases, ledgers, products, customers) to CSV or PDF before you leave. We retain backups for 30 days after cancellation; after that they are permanently purged.
Bintree is cloud-hosted, so a working internet connection is required at the counter. We are evaluating an offline-first mode for the next release.
